Roasted Bell Peppers 1/2 medium onion 1 red bell pepper 1 yellow bell pepper 1/2 green bell pepper 1 small package of mushrooms 2 large carrots 1 T olive oil 1. Cut carrots into straws and microwave about 5 minutes to soften slightly. 2. Cut onion into eighths. 3. Seed and cut bell peppers into straws. 4. Toss all vegetables and mushrooms in oil. 5. Spread in even layer on baking sheet. 6. Season to taste. 7. Roast in 350F oven for 1/2 hour.
